Yum, what a satisfying healthy warming bowl of tasty goodness! I haven’t made minestrone in years! But this is definately coming into my rotation. I put the potato in at the same time as the pasta to give it more cooking time. I used risoni and added a squeeze of lemon juice before serving. Delicious!
Doordat deze minestronesoep een lekker dikke en volle groentesoep is, kun je het zeker serveren als maaltijd. Het is ook lekker met nog een stokbroodje erbij. Maar dat hoeft niet per se. Qua groentesoorten en pastasoort kun je zeker variëren. Er is niet één vast recept voor minestronesoep. In Italië verschilt het heel erg per regio wat erin zit.
